Purslane Pesto

One of my favorite WEEDS! Purslane is the HIGHEST plant based source of Omega-3 fatty acids on earth and is the most reported yard “weed” as well. DON’T KILL IT! This stuff grows like wildfire and requires almost zero maintenance and can be used in everything from smoothies to pesto!

It’s high pectin count makes for a great soup thickener as well. It also has more beta carotene than carrot and is also high in Vitamin C and E. No place to grow? I’ve also found it in farmers markets in LA, Chicago and NYC — so you likely can too. 

There are so many substitutions for this recipe so use this as a guide and enjoy!

 

Purslane Pesto

Makes 1 Cup

 

1c Purslane (remove larger stems toward the bottom)

1c Basil

1/2 Pine Nuts or Sunflower Seeds

1/4c Nutritional Yeast 

1/4c Water 

1 Clove of Garlic

Juice of 1 lime (optional, to keep the bright green color)

Sea Salt to taste

 

Blend well, adding more water if needed. 

Keeps 2 days
